No, I like to innovate because I think it’s fun and original! You can really enjoy yourself in the kitchen and make recipes with many colors. You can also make your own bread, use sandwich bread, Mauricettes, wholemeal or cereal bread. It is, as usual, a recipe infinitely adaptable to your taste and the contents of your cupboards.
and for the spinach pesto I chose to use garden fresh spinach instead of basil. But just like the traditional recipe, there’s Parmesan cheese, garlic, olive oil and pine nuts. You can completely customize the pesto.
For example, spinach can be replaced with basil like the classic recipe, but also with kale. For pine nuts, these can also be replaced by almonds or hazelnuts. And finally, the Parmesan cheese could be replaced by goat cheese, but also dried ricotta. In this case, don’t forget to add a little salt, because salt like lemon juice has a flavor enhancer. And finally, the clove of garlic I added could be replaced with wild garlic, an acquaintance of mine who lives in the mountains.
And finally, add sun-dried tomatoes and cucumber for this pesto sandwich. As usual, really rely on seasonal fruits and vegetables. Tomatoes are not in season, so it’s quite possible to use dried tomatoes instead. In addition, a few years ago I had already made a recipe for homemade dried tomatoes on the blog. Spinach and chicken pesto sandwich

- 1 bread of your choice, here 185g
Pesto sandwiches X3
- 75 g fresh spinach leaf
- 65 g Grated parmesan cheese
- 40 ml olive oil
- 30 g pine nuts
- 1/2 pod garlic
- 85 g chicken breast aiguillette here
- 30 g cucumber
- 25 g dried tomato
- fresh spinach leaf
- Pour the olive oil into the blender with the pine nuts, parmesan, garlic and fresh spinach. Blend until you get a smooth pesto.
- Cut the bread in half and add the pesto inside with the chicken previously grilled with a little olive oil, the dried tomatoes, the chopped spinach, the cucumbers and sprinkle with pine nuts for tasting.
