This can be replaced with another oil that can withstand boiling, but also with egg yolk alone. The egg yolk is indeed fat and can also replace butter or oil in these types of recipes.

The bread

  • 340 g wheat flour T80
  • 130 ml water
  • 1 egg
  • 30 ml olive oil
  • 15 g whole sugar
  • 5 g salt
  • 5 g instant baker’s yeast

  • 700 ml water
  • 25 g bicarbonate
  • 5 g salt

the garnish

  • smoked salmon or trout, chicken…
  • fresh goat or ricotta, cottage cheese..
  • lemon juice
  • wild garlic or dill
  • pickle sweet and sour or dried tomato, cucumber..
  • Pour the yeast into a container with a little warm water. Mix and let it activate for five minutes. Then add the flour, salt, oil, sugar, egg and the rest of the sweetness.

  • Mix and knead the dough until smooth and smooth. Let it rise in the oven for at least two hours.

  • Divide the dough into four pieces and make into rolls. Pour them into boiling water with the baking soda and salt.

  • Stop counting about ten seconds for each bun. Place them on the baking tray. Brush with egg yolk and cut with scissors.

  • Bake for 20 minutes at 190°C. Let cool and cut the buns in half and add the filling of your choice.
  • I chose fresh goat cheese with smoked salmon, sweet and sour pickles, lemon juice and finally a little garlic. To enjoy immediately as an aperitif in small portions or as a sandwich.
